Baked Pumpkin Fries

Hi there! Ever feel like fries but a healthy alternative? why not try these delicious healthy and crispy pumpkin fries!

Fresh out of the oven – PUMPKIN FRIES!

How to make these delicious pumpkin fries:

Ingredients: 

  • 1 small pumpkin
  • 1 tablespoon olive oil
  • 3-4 teaspoon of cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • Bunch of coriander

Preparing the pumpkin: 

I personally like to peel my entire pumpkin before I slice it in half and scoop out the seeds alternatively you can slice the pumpkin in half, remove the seeds and then peel the skin using a vegetable peeler or sharp knife (make sure your blade is sharp)!

Step 1. Slice the pumpkin halves into 1 inch slices or wedges. Keep the size consistent so it can cook evenly in the oven!

Step 2. Don’t skip this step: Place the pumpkin slices in a large bowl filled with cold water. Soak the fries overnight covered in cling wrap alternatively you can soak them for 30 minutes to 1 hour if you don’t have much time. (Soaking removes the starch and gives you crispy fries!!!)

Step 3. Once fries are finished soaking, pat them dry with paper towel making sure there is no excess water on the pumpkin slices – You don’t want soggy fries!

Step 4. Preheat oven at 218 Degrees Celsius for 15-20 minutes, prepare the baking tray by lining a sheet of parchment paper. While the oven preheats prepare the salt and chopped coriander in a small bowl.

Step 5. Using a zip lock bag or a clean freezer bag add the pumpkin slices and add the cornstarch and shake the bag to coat each slice evenly. If you don’t have these bags on hand you can do this in a large bowl.

Step 6. Next add in the olive oil and coat well, add the paprika, garlic powder and pepper. Toss it well to cover each pumpkin slice. Place fries on the baking tray with the parchment paper making sure they are equally spaced to avoid overcrowding.

Step 7. Bake the pumpkin fries for 10 minutes and then flip the fries once and bake for another 10 minutes until they are golden brown and crispy.

Step 8. Once the fries are cooked, take them out of the oven and immediately sprinkle on the salt and coriander.
